How to make icing novelties and flowers
When making icing novelties and flowers you can make your own Petal paste:
1 egg white, 250g sifted icing sugar, 1ml cream of tartar, 1 tsp cmc or tylose
Add cream of tartar to egg white and mix.
Add a tablespoon of icing sugar to the egg and mix until blended, continue adding a tablespoon at a time and mixing until blended. Add the cmc. The mixture will immediately thicken. Rub a little holsum on your hands and work mixture until a pliable paste. Paste should not be sticky nor to stiff.
Store in a sealed plastic bag in a sealed plastic container. Paste is ready to use.
Or
Use readymade pettinice and add 1tsp tylose or cmc for every 100g pettinice.
Work the powder into the pettinice and leave to rest for 15min in a sealed bag. Then roll out as desired.
Keep the left over sugar paste in a bag in a sealed container to prevent it getting hard
#TIP: If you find it has hardened, you can warm it up in a microwave oven for 2 seconds – use immediately
